Adernats Cava De Guarda Brut Nature NV

An organic Cava from Vinícola Nulles in Catalonia, produced by a historic co-operative of 90 growers working from a landmark “Cathedral” winery near Nulles. Rooted in a structure originally built in response to the phylloxera crisis, the estate still uses its original vats and underground cellars, now fully certified organic. A traditional blend of Macabeo, Parellada and Xarel·lo from calcareous soils in a Mediterranean climate, aged 24 months in bottle. Fine, persistent bubbles carry citrus peel, green apple and a touch of brioche. Subtle mineral tension runs through a crisp, dry palate, finishing long, clean and elegantly refreshed.
